3 Herbed Quinoa Salad


Herbed Quinoa Salad
This dish was one of those random decoctions that turned out to be surprisingly amazing! It started when my girlfriend brought me some fresh herbs that she wasn't going to use. She knew they would go bad soon and figured I could make some use out of them since I cook a lot. I received some fresh Basil, Cilantro, and Thyme. Not wanting them to go to waste myself I came up this dish. I had no idea how these combination of herbs would taste combined together, but I lucked out, because this was delicious! This is a perfect side dish by itself or turn it into a salad by adding some cucumber, avocado, nuts, etc... And feel free to play around with your own favorite combination of herbs.
  • 1 ½ cups of Quinoa
  • 2 cups of Vegetable Broth
  • 1 cup of Water
  • ½ cup of Fresh Basil
  • ½ cup of Fresh Cilantro
  • ½ cup of Fresh Thyme
  • 2 tbsp of Olive Oil
  • Juice from ½ Lemon
  • Optional Add Ins: Cucumber, Avocado, Nuts, Nutritional Yeast, dried Cranberries, or anything else you can think of.
  1. Add Quinoa to Vegetable broth and water and bring to a boil then reduce to a simmer. Cook uncovered until water is absorbed.
  2. Meanwhile add Herbs, Olive Oil, and Lemon Juice to a food processor and pulse until herbs are finely chopped.
  3. Combine Herb mixture with Quinoa
  4. Add optional ingredients right before you sit down to eat.
Quinoa is considered one of the healthiest grains. Not only is it Gluten free, but it’s a complete protein containing 9 essential amino acids. It also contains twice as much fiber as other grains. Packed full of Phytonutrients and Antioxidants it is no wonder that Quinoa was so highly valued by ancient tribes that would consume this grain for health and stamina.

Basil is considered to be the king of herbs for it’s anti-inflammatory and anti-bacterial properties. It also contains essential nutrients to help improve cardiovascular health.

Cilantro helps to chelate (remove) heavy metals like mercury, aluminum, and lead from the body. It is also anti-bacterial and anti-viral. This herb has a high antioxidant content including the flavonoid Quercetin, which is a powerful antihistamine and anti-inflamatory.

Thyme has been used in natural medicine to help break up chest congestion in cases of bronchitis. The volatile oil contained in thyme called thymol helps to protect cell membranes in the body and slow the aging process. Thyme also contains flavonoids that make it a powerful antioxidant. And it is considered to be anti-microbial fighting off fungus and other bacteria as well.
