Avocado Toast and Eggs
I can't take credit for this recipe. I first had this meal at restaurant called Swami's Cafe in Carlsbad California. I immediately became obsessed and went back their several times during my trip. Since then I've recreated this meal at home many times. It has quickly become a favorite of mine. Not only because it is delicious, but because it is so ridiculously easy to whip up. While this is a great way to start your day, I'm all about breakfast for dinner. And after a long day this hits the spot.
Recipe type: Main
  • 1-2 slices of Gluten free bread (I like the sprouted kind)
  • 1 avocado
  • 1-2 organic eggs
  • Cherry tomatoes (optional)
  • Fresh Basil
  • Pinch of chili pepper and himalayan salt (to taste)
  1. This is pretty self explanatory:
  2. Make toast
  3. Cook Eggs over easy, poached, etc.. any style where the yolk is runny
  4. Spread avocado chunks onto toast and add a few slices of tomatoes
  5. Sprinkle with a little chili powder and himalayan salt.
