Bison Meatballs
Confession: I don't always have time to sit down and eat dinner. And depending on how busy my work day is, I may not have time for lunch either. But that doesn't mean I don't eat! I just need something quick and easy that I can grab from the fridge and eat between clients and meetings. Which is why I keep these bison meatballs on me at all times. They make a great dinner paired with some Zucchini noodles, or they are a great meal/snack on the go by themselves. The combination of ingredients keeps them tasty and moist so no sauce or condiment is necessary to enjoy them. If you have a busy schedule and don't always have time for a full meal I suggest making these a staple in your fridge.
  • 1 lb of Organic Grass Fed Ground Bison
  • 1 egg
  • ¼ cup of ground almonds or almond butter
  • 1 tbsp of MCT Oil
  • 1 tsp of Sriracha Sauce (I like it spicy so I add more)
  • Garlic Powder
  • Turmeric Powder
  1. Combine all ingredients and form into golf sized balls.
  2. Place on a baking sheet and cook for 15-20 minutes at 350.
Grass-fed Bison provides nutrient dense, low fat, low cholesterol meat with as many Omega-3s per serving as salmon, and three to six times the amount of omega-3s as grain fed animals. It contains the highest-know levels of the fat-blocker and anti-carcinogen, CLA (conjugated linolaic acid).
