Bone Soup

Bone Soup
In Chinese Medicine Bone Soup has been used for 5,000 years because of it's therapeutic properties. However, recently it has become mainstream due to the Paleo movement. And it's good timing, because now more then ever people could use this magical elixir. With autoimmune disease on the rise and conditions such as arthritis, leaky gut, and inflammatory disorders, bone soup should be prescribed by physicians. In fact I do prescribe it to my patients. Bone soup is not only extremely healing but it also makes the best soup stock! I drink a cup a day for more therapeutic purposes, but this also makes a great base for stews and soups. In my batch I used beef bones but you can use chicken too. Some recipes call for chicken feet, but that just grossed me out too much. I'm still getting over the weirdness factor in general, but if you want to go for chickens feet then be my guest. And throw in whatever you want for stock flavoring, such as onions, garlic, and carrots.
  • 2-4 pounds of grass fed beef bones (I got femur bones from the butcher because they have the most marrow)
  • 1-3 carrots chopped
  • 1 onion chopped
  • 1 tbsp of apple cider vinegar (this helps draw out the marrow)
  • Water to fill crock pot
  1. Add all ingredients into a crock pot and cook on low.
  2. If you are using beef bones cook for 48 hours. If you are using poultry bones cook for 24 hours.
  3. Once done cooking strain the stock, discarding carrots, onions, and bones.
  4. Keep the remaining stock in a large bowl and cool in the fridge.
  5. Once the stock cools you will see a hardened layer of fat on the top. Peel this off and then store the rest of the stock in mason jars or other glass containers.
  6. Reheat in portions on the stove.
The marrow of the bone is the most nutrient dense part of the body. You can think of the marrow as your essence. When you are drinking bone soup you are drinking the most nutrient dense part of the animal. This soup provides you body with healing compounds like collagen, proline, glycine, and glutamine that have the power to boost your immune system. You'll find minerals in forms that your body can easily absorb: calcium, magnesium, phosphorus, silicon, sulphur and others. The healing properties from the bone help with a variety of conditions such as leaky gut and digestive disorders, arthritis and joint pain, allergies and immune health, and even cellulite and anti-aging.

Leaky gut occurs when the lining of the gut becomes permeable allowing protein molecules to pass through the intestinal wall. Not only does this mean the lining of your gut is inflamed, but it also causes an autoimmune response as your body sees this protein molecule as a foreign invader and attacks it. The nutrients found in bone soup are some of the most healing properties for leaky gut and helps to repair the intestinal lining.

There is a direct link between leaky gut and autoimmune disorders and allergies. Which is why bone soup is so helpful for the immune system as well. In addition the collagen found in bone soup is especially helpful for arthritis and painful joints. It also helps break up the fibrous tissue that creates cellulite. Collagen is also great for sagging skin as it helps to tighten and firm.

If you have any of the above conditions or are just looking to improve your overall well being, I recommend having 1 cup of bone soup 3-5 times a week. If you are really dedicated go ahead and have it every night.
