Cauliflower Curry Dish
This dish is a variation on my Steamed Veggie Bowl. This is another super quick, yummy meal. Steam some veggies and throw some curry spiced coconut milk on it! Use frozen veggies to make it even easier, and adjust the amount of spice to your liking. You have no excuse not to get your veggies in now.

  • Cauliflower
  • Zucchini
  • Butternut squash cubed (fresh or frozen)
  • Coconut Milk (lite or full fat)
  • 1 tbsp of Red Thai Curry Paste
  • Cashews
  1. Steam Cauliflower, Zucchini, and Squash until cooked through.
  2. In a small sauce pan mix coconut milk and red thai curry paste over medium heat.
  3. Pour over veggies and top with cashews.
