Cheesy Kale Chips: Vegan Style
 
I spent this past weekend getting certified in Acupuncture Injection Therapy. This is where we learn how to give B-12 shots, Homeopathic injections, and herbal injections. I was really excited to take this course, although I admit I wasn't too thrilled about spending my weekend in a classroom. These seminars tend to be long hours and it's a lot of information to take in. To prepare my mind and body I make sure that I have tons of nutritious snacks and meals on hand. One of my favorite go to snacks are my cheesy kale chips. They take only 10 minutes to make and are packed full of all the nutrition I need to keep my mind and body going strong.

Ingredients
  • 1 bunch of Kale
  • 1 tbsp of Olive oil
  • 1 tbsp of Nutritional Yeast
  • 1 tsp of Sea Salt/ Kosher Salt/ Himalayan Salt
Instructions
  1. Set oven to bake at 350
  2. Tear or chop Kale into chip size pieces and place on a cookie sheet
  3. Evenly coat Kale with the Oil, Nutritional Yeast, and Salt
  4. Bake for 10 minutes or until crisp
Notes
Kale stands out as a nutritional powerhouse! It is loaded with Vitamin K, A, and C. And it also has one of the highest Iron contents for a vegetable. Kale has an anti-inflammatory effect on the whole body helping to treat a wide variety of conditions. With over 45 antioxidants it is one of the best cancer fighting foods out there!



Nutritional Yeast is a vegans dream because it tastes just like cheese but it's dairy free! Plus it also happens to be an amazing source of protein, with one ounce packing 14 grams. And it supplies you with all your essential B vitamins which are so important to have in an animal free diet. You can pretty much sprinkle it on any dish that would compliment its nutty cheesy flavor.



So if you are looking for a healthy satisfying snack these kale chips fit the bill. I promise they taste just as good as a bag of potato chips and are obviously 10 times better for you!
