Chia Superfood Pudding
Chia seeds are not just for creating weird ceramic plant like pets. They are actually one of the most nutritious and versatile Superfoods out there. What constitutes a superfood? A superfood is considered to have extraordinary health benefits. They are packed full of vitamins and antioxidants and are proven in their ability to enhance and support optimal health. So I decided to take my love of Chia Seeds to the max by combining them with fellow Superfoods Raw Cacao and Goji Berries. Together this pudding makes a powerful nutritious punch!
  • 3 tbsp of Chia Seeds
  • ⅓ cup of Almond Milk
  • 1 tbsp of Cacao Powder
  • A few drops of Stevia (optional for a sweeter taste)
  • 1 oz of Goji Berries
  1. Combine the Chia Seeds and the Milk in a bowl and allow the Chia Seeds to absorb all the liquid (They will expand). Add more milk to your desired consistency
  2. Stir in Cacao Powder
  3. Stir in Stevia if adding
  4. Top with Goji Berries
  5. Serve or keep refrigerated
Okay so let me break down why this sweet snack is so good for you.

To start off Chia seeds were a staple food for the Aztecs and Mayans. They consumed these seeds for increased energy and stamina. In fact Chia means "strength." One thing that makes Chia Seeds such a super star is its high fiber content. One serving of Chia Seeds supplies 42% of your daily fiber requirement. And in addition to being packed full of antioxidants they are an excellent source of your Omega 3 Fatty Acids. If you have heart issues, digestive issues, low energy and fatigue, or are looking to lose weight, you'll want to include Chia Seeds in your diet.

Thats right, Chocolate is a Superfood! Specifically Raw Cacao (raw chocolate) is a Superfood. Also high in Antioxidants and Vitamins, Raw Cacao promotes heart health, contains anti-aging properties, and detoxifies. However, it's major claim to fame is that Raw Cacao helps to regulate neurotransmitters and alter brain chemistry. It releases feel good hormones and helps you to feel more alert and awake. This makes it wonderful for treating depression and fatigue.

Goji Berries are my favorite! Mostly because they are actually an herb in Chinese Medicine called Gou Qi Zi. Medicinally they are consumed to nourish blood, enhance eye site, and increase longevity. In Western Medicine Goji Berries are known for their high Antioxidant content. This is attributed to its known benefit for enhancing heart health and preventing cancer. Antioxidants also help to fight off free radicals in the body which is why Goji Berries are considered to have Anti-aging properties. They also enhance brain health and are used to help treat Alzheimer's. Did I mention that Goji Berries happen to be delicious too!
