Superfood Chocolate Bark
It's a busy holiday season for me this year and I didn't have time to bake my usual batch of Christmas cookies. But I did have time to whip up some Chocolate Bark real quick. If you need a fast holiday dessert or a gift idea chocolate bark is perfect. It's easy and takes hardly any time at all to make. For this batch I used dark chocolate which has tons of antioxidants and decided to healthy it up some more by adding Goji berries and Pistachios. Plus the little bits of red and green gives the chocolate quite the festive look.
Recipe type: Dessert
  • 1 lb of Dark Chocolate
  • ½ cup of Goji Berries
  • ½ cup of Pistachios
  1. Break up Chocolate into little pieces and place in a double boiler to melt. Or you can make your own double boiler by placing a bowl on top of a pot of boiling water. Stir chocolate until it has all melted.
  2. Add ¼ of a cup of Goji berries and ¼ of a cup of Pistachios into the melted chocolate and stir.
  3. Pour the melted Chocolate concoction onto a cookie sheet and spread evenly.
  4. Sprinkle remaining Goji berries and Pistachios onto the top of the Chocolate.
  5. Place cookie sheet in the refrigerator and let Chocolate set.
  6. Once Chocolate is hard you can break it up into chunk size pieces
