Creamy Vegan Broccoli Soup
Soup in the summer? Yes, I know its weird. But with 2 weeks of non stop rain (thanks to the latest tropical storm) it wasn't feeling very summery. I was spending a lot of time indoors which gave me a lot of time to experiment in the kitchen. The grey skies reminded me of winter up North and put me in the mood for soup. So there you have it, my Creamy Vegan Broccoli Soup was born.
  • 1 head of Broccoli chopped
  • 3 cups of Spinach
  • 1 Sweet Onion chopped
  • 2 Cloves of Garlic minced
  • ½ Avocado
  • Handful of fresh Parsley
  • 1 can of Coconut Milk
  • 2 cups of water
  • Coconut Oil
  • Sea Salt
  1. Preheat the oven to 400, and lay out chopped broccoli on a baking sheet, coat with coconut oil and sea salt. Bake until broccoli is cooked through.
  2. Meanwhile saute the garlic and onion in a large frying pan with coconut oil until onion is translucent. Add spinach and let it cook down.
  3. When broccoli and spinach mixture are both cooked add them to a high powered blender and with 2 cups of water and process.
  4. Add avocado, parsley, and coconut milk to the blender and process again.
  5. If mixture is too thick add more water.
  6. Add sea salt to taste.
Now obviously we know that broccoli is good for you, but did you know that it is actually one of the best cancer fighters out there?! It is very high in Vitamin A and Iron, and has more Vitamin C then an orange. Plus the nutritionally make up of broccoli is 40% protein, making it a great choice for vegetarians.

It contains lots of B Vitamins, which helps to enhance memory. And it also contains L-Tyrosine, an amino acid that helps to improve focus.

Parsley contains a lot of antioxidants and anti-inflamatory properties that help relieve the symptoms of diseases such as Rheumatoid Arthritis. It also helps to protect the heart by regulating Homocysteine levels in the body. Newest studies show that there are specific agents in Parsley which help to inhibit tumor formation and prevent cancer.

Avocado's are known for containing all of your good healthy fats that help lower cholesterol. They also contain high levels of Folate and Lutein, which helps to support eye health. Avocados lower blood pressure, and reduce the risk of stroke. They also bring more oxygen and blood flow to the brain, improving cognitive function. And in addition to all their healthy fats they contain a high amount of fiber and promote healthy digestion. They are known for a wide variety and anti-inflammatory benefits due to its high nutrient content. This also makes it a great cancer fighter, and overall one of the best foods you can eat!

Not only is Coconut milk delicious and creamy, but it also contains Lauric Acid which is an anti-bacterial, anti-fungal and anti-viral agent. It promotes heart health, aids in weight loss, and boost the immune system.
