Creamy Vegan Sweet Potato Soup
 
This soup turned out better then I expected. In fact not to brag, but it's pretty incredible. I was really just experimenting and playing around with flavors when I made this soup. I wanted something creamy and satisfying. The key was adding the can of Coconut milk. It makes this soup taste sinfully rich when in actuality it's really quite healthy.

Ingredients
  • 3 medium sized Sweet Potatoes (peeled)
  • 1 Apple
  • 2 Carrots
  • 1 Onion
  • 1 inch slice of Ginger Root
  • 1 can of Coconut Milk
  • 3 cups of Vegetable Broth
  • 1 cup of Water
  • A dash of Cinnamon, Nutmeg, and sea salt to taste
  • Garnish with Pumpkin seeds or Pine nuts (optional)
Instructions
  1. Chop Sweet Potatoes, Apple, Carrots, Onion, and Ginger
  2. Place veggies in a large pot with Vegetable broth and Water and bring to a boil
  3. Reduce to a simmer and cook until vegetables are tender
  4. Stir in Coconut milk
  5. Add all ingredients into a blender in batches and process until purred
  6. Add seasonings to purred soup

The best part about this soup is that every single ingredient is good for you and has health benefits.


Sweet Potatoes are high in Beta-Carotene, which is what makes the orange color. This antioxidant is proven beneficial in pretty much every disease but especially cancer. Sweet Potatoes have a high fiber content which promotes healthy digestion. And they are also high in Vitamin B6 which is important for maintaining a healthy heart. In Chinese Medicine they are a great Qi boosting food as well.


Apples have been linked with a variety of health benefits from preventing cancer to lowering cholesterol. They improve your lung function, boost your immune system, and reduce the risk of diabetes. Apples are even good for you brain and can help prevent Alzheimer's.


Carrots are also high in Beta-Carotene. They help to prevent Heart Disease, Cancer, and reduce the risk of Stroke. In Chinese medicine Carrots also help to detoxify and strengthen the connective tissues of the body.


Onions promote cardio vascular health, support bones and connective tissue, have anti-inflammatory properties, and prevent cancer. They also contain an ingredient called Quercitin which is a potent antioxidant to treat allergies and is also considered an antiviral.


Ginger root is used as an herb in Chinese medicine to treat nausea and upset stomach as well as preventing and treating colds. Making this a great soup to keep in mind when you are not feeling well.


Coconut Milk contains Lauric Acid which is an antibacterial, antifungal and antiviral property. It promotes heart health, aids in weight loss, and boost the immune system.
