I can describe this salad in three words: Refreshing, Tasty, and Fast. This took me a total of 10 minutes to whip up and it was ridiculously easy. This is perfect as a healthy lunch, or side dish. I also think this would be a great dish to bring to summer cookouts, so make sure to bookmark this one for when the weather warms up.

Ingredients
  • 1 can of Chickpeas
  • 1 can of Diced Tomatoes
  • 1 Large Cucumber chopped
  • 1 heaping handful of fresh Parsley chopped
  • ½ cup of crumbled Feta
  • 1 tbsp of Lemon Juice
  • 1-2 tbsp of Olive Oil
  • 1 tbsp of Balsamic Vinegar
Instructions
  1. Drain and rinse the can of Chickpeas and Tomatoes and combine in a large bowl
  2. Add Cucumber, Feta, and Parsley, mix well
  3. Add Lemon Juice, Olive Oil, and Balsamic Vinegar and combine

Chickpeas are packed full of Fiber and Protein which will help to not only fill you up and keep your digestion on track. They support the cardiovascular system by lowering cholesterol, and also helps to control insulin by regulating blood sugar.

Tomatoes are known to be an awesome source for Lycopene. This nutrient is an antioxidant that helps prevent tumor growth, benefits cardiovascular health, and helps to protect against macular degeneration.


Parsley contains a lot of antioxidants and anti-inflamatory properties that help relieve the symptoms of diseases such as Rheumatoid Arthritis. It also helps to protect the heart by regulating Homocysteine levels in the body. Newest studies show that there are specific agents in Parsley which help to inhibit tumor formation and prevent cancer.
