Garlicy Kale Salad
The big Flu epidemic is here and everyone is freaking out! Not being a huge fan of the flu shot myself I am taking extra precautions to boost my immune system by taking extra supplements, drinking lots of green juice, and eating foods that are packed with good nutrition. The following meal was inspired by a garlicy kale salad that I had at Whole Foods. I haven't seen it in a few months so I decided to try and replicate myself. As I was putting the ingredients together I realized that this was an awesome immune boosting meal. I'm having a portion every day to get me through this Flu season.
  • 1 bunch of kale
  • 3 tbsp of Tahini
  • 2-3 Garlic Cloves
  • 2 tbsp of Olive Oil
  • 1 tbsp of Lemon Juice
  • 2 heaping tbsp. of Nutritional Yeast
  • Avocado (optional)
  1. Tear Kale leaves into bite sized pieces and place in a large bowl (save stems for juicing if desired)
  2. In a food processor add Tahini, Garlic Cloves, Olive Oil, Nutritional Yeast, and Lemon Juice and process until smooth
  3. Combine sauce with Kale (easiest to just mix with your hands)
  4. Add slices of Avocado if desired

Kale contains high doses of Vitamins A, E, and K. It is also packed with over 45 antioxidants! Kale also helps support the bodies detoxification process which is essential to keep your immune system healthy.

Tahini, which is high in immune boosting B Vitamins and Zinc, also happens to increase white blood cells in your body making it an awesome defense against the Flu.

Garlic is probably one of the best foods you can eat to prevent yourself from getting sick as well as to treat yourself if you happen to be fighting something. In fact one of the best (but hardest) home remedies is to eat raw garlic. If anyone has ever attempted to do this you know that it is a pretty painful procedure. In this recipe you are still eating raw garlic but the tahini and nutritional yeast takes the bite out of it. The reason garlic is so good for you is that it is packed with antibacterial and antiviral properties. Essentially it kills bacteria, viruses, yeast, fungi, and even worms. In other words bacteria doesn't stand a chance against raw garlic.

Nutritional Yeast is what gives this recipe a cheesy flavor. It is a great alternative to cheese for vegans, and also happens to be really good for you. Nutritional Yeast is a great source of B-12 which has so many amazing functions in the body but also plays an important role in fighting off germs and other nasty organisms in the body.

Lemon Juice which I love for its alkalizing properties, will also give you a nice dose of Vitamin C and this recipe.

So to prevent the flu remember to wash your hands, get plenty of sleep, and eat some garlicy kale salad!
