I just discovered Millet this past year and it's become one of my favorite gluten free grains. It is a quick and easy grain to cook and is super versatile. This is one of my go to Millet dishes that I make quite often. It gets its lovely green hue from the basil walnut pesto thats mixed in. I make my pesto with walnuts over traditional pine nuts because it's about 10 times cheaper (when did pine nuts get so expensive?). If you want to splurge and use pine nuts instead, go for it. And keeping with the green theme I added in some roasted broccoli. I love roasted broccoli so much I could eat a big bowl of it (and I have). If you haven't been a big fan of broccoli in the past, I guarantee you'll love the way it's prepared in this dish.

Ingredients
  • 1 cup of Millet
  • 3 cups of Water
  • 1 large head of Broccoli chopped
  • 1 tbsp of Olive Oil
  • 1 tsp of Himalayan salt or Sea Salt
  • 2 cups of Basil leaves
  • ⅓ cup of Olive Oil
  • ½ cup of chopped Walnuts
  • 2 cloves of Garlic crushed
  • ½ cup of grated Parmesan Cheese
  • ¼ cup of Cashews
Instructions
  1. Add Millet and Water into a medium sized pot and bring to a boil, then reduce to a simmer and cook for 20-25 minutes until water is absorbed.
  2. Meanwhile turn oven on to 350 degrees and prepare chopped Broccoli.
  3. Place Broccoli on a cookie sheet and coat with Olive Oil and Salt, than roast for 10-15 minutes in the oven.
  4. To prepare pesto add Basil, Walnuts, Parmesan, and Garlic into a food processor and pulse until fine.
  5. Slowly add in Olive Oil to food processor and pulse until combined
  6. When Millet is cooked add the desired amount of Pesto (you will have extra) and combine.
  7. Add in Roasted Broccoli, Cashews, and salt to taste

There is so much good stuff going on in this dish, lets start with the main ingredient. If you've never tried or even heard of Millet, here is your opportunity to learn all about it. Not only is Millet gluten free, but it is also one of the best anti-fungal grains out there. It can help clear up Candida and other yeasts that may be lurking in the body. It also is a highly alkalizing grain and has a strong amino acid profile. In Chinese medicine it is one of the best foods for improving digestion and builds Qi (energy) in the body. Use for any sort of Stomach upset, and for expecting mama's this is a great grain for morning sickness.



Now everyone knows that broccoli is good for you, but did you know that it is one of the best cancer fighters out there. It is very high in Vitamin A and Iron, and has more Vitamin C then an orange. Plus the nutritionally make up of broccoli is 40% protein, making it a great choice for vegetarians.



Now there is a lot of good stuff going on in this pesto. For one you have Basil, considered the king of herbs for its anti-inflammatory and anti-bacterial properties. Walnuts are a great source of your Omega 3's and in Chinese medicine they support Yangs function in the body and can treat low back and knee pain. And a little Garlic goes a long way in its anti-inflammatory effects.
