Grounding Root Veggie Roast
I felt like I needed some grounding tonight so I roasted up a lovely grouping of root veggies. Rainbow carrots, parsnips, and beets. Foods grown in the ground are extremely nourishing for your root chakra, and can help ease anxiety. So if you are feeling a little crazy, this meal will settle you back down. And even if you aren't feeling crazy, it's cold out! Eat something warm and nourishing!
  • 1 bunch of Rainbow Carrots chopped
  • 1 bunch of Parsnips Chopped (about 4)
  • 3-4 Red Beets Chopped
  • Olive Oil
  • Himalayan Salt
  • Cardamom (optional)
  1. Preheat oven to 400
  2. Place veggies on a baking sheet, evenly coat with olive oil, cardamom, and salt.
  3. Roast for 20-30 minutes, until tender.
