When you are on a cleanse the list of things you can not eat can seem rather limiting. No gluten, no dairy, no sugar, etc… But when you really start to explore the foods you can eat you (i.e. fresh veggies, quinoa, raw nuts, apples, avocados, wild fish, organic eggs, etc..) you'll find that you have lots options. If you are willing to get creative that is. My goal now is to experiment a bit in the kitchen and bring you tons of cleanse friendly dishes. This salad is my absolutely favorite. I have it for lunch every day, and sometimes dinner too. Every ingredient can be consumed during a cleanse, even a candida cleanse (apples are on the ok to eat list). For salad dressing you can make your own or check out Cindy's Kitchen at Whole Foods, that brand is cleanse approved. And of course this recipe isn't just for people that are on a cleanse. Any one can enjoy this nutritious dish.

  • Organic Kale chopped
  • Organic Bok Choy chopped
  • Organic Green Apple chopped
  • Organic Cucumber chopped
  • Avocado diced
  • Quinoa
  • Raw Walnuts
  • Organic Goji Berries
Instructions
  1. Combine desired amount of all ingredients and add dressing of choice.

Kale contains high doses of Vitamins A, E, and K. It is also packed with over 45 antioxidants! Kale also helps support the bodies detoxification process which is perfect for a cleanse. Bok Choy contains a wealth of vitamins C, A, and K, and excellent sources of calcium, magnesium, potassium, manganese, and iron, bok choy deserves its reputation as a powerhouse among vegetables. Vitamin A, for instance, is essential for a properly functioning immune system, while vitamin C is an antioxidant that shields the body from free radicals. Bok choy supplies potassium for healthy muscle and nerve function, and vitamin B6 for carbohydrate, fat, and protein metabolism. Quinoa is considered one of the healthiest grains. Not only is it Gluten free, but it’s a complete protein containing 9 essential amino acids. It also contains twice as much fiber as other grains. Packed full of Phytonutrients and Antioxidants it is no wonder that Quinoa was so highly valued by ancient tribes that would consume this grain for health and stamina.

Apples are packed full of antioxidants and the juice actually helps with the bodies detoxification process. They also contain a substance called malic acid, that helps maintain liver function and improves digestion. In Chinese Medicine apples are used to clear away heat in the body and help protect the Lung.

Cucumbers are one of the most alkalizing foods you can eat, and the most hydrating. They have a high silica content making it great for the skin, which is why they are often used in facials and lotions. Because of its cooling nature it acts as an anti-inflammatory both externally and internally. In fact Cucumbers can treat everything from a bad sunburn to a stomach ulcer. In Chinese medicine it is used to treat excess heat in the body and is especially useful in cooling you off during the summer months.

Goji berries are by far my favorite superfood and I add them into everything. These little guys are full of Antioxidants, Vitamins, and Minerals. In Chinese medicine there are actually considered to be an herb called Gou Qi Zi and are used to nourish blood, improve eye sight, and increase longevity. From a Western medical perspective they improve heart health and help to prevent cancer. With 21 trace minerals Goji berries are a completely protein source that you want to make a regular part of your diet.

In my world Avocado's would be included in every salad. They are known for containing all of your good healthy fats that help lower cholesterol. They also contain high levels of Folate and Lutein, which helps to support eye health. Avocados lower blood pressure, and reduce the risk of stroke. They also bring more oxygen and blood flow to the brain, improving cognitive function. And in addition to all their healthy fats they contain a high amount of fiber and promote healthy digestion. They are known for a wide variety and anti-inflammatory benefits due to its high nutrient content. This also makes it a great cancer fighter, and overall one of the best foods you can eat!

Walnuts provide you with your Omega 3 fatty acids, which is essential to your Cardiovascular system and your Brain. In Chinese medicine Walnuts are actually considered an Herb called Hu Tao Ren, and are used as a tonic. They can help treat low back pain, asthma, frequent urination, constipation, and impotence. In essence, Walnuts can be considered a longevity food.
