Mango Banana Vegan Ice Cream
Have I got a treat for you this week! Ice Cream! Yes a scoop of all natural, vegan ice cream. Why? Because it is so freaking hot out! The north east has been experiencing record highs and down in Florida the humidity is so thick you could cut it with a knife. There is nothing else to do other then sweat and try stay cool. This treat will definitely help you cool off. Made with just frozen bananas and mango's you won't believe that you aren't eating real ice cream.
Recipe type: Dessert
Serves: 3-4
  • 1 frozen Banana (peel before freezing)
  • 1 cup of frozen Mango pieces
  • ⅔ of a cup of Almond Milk
  1. Add all ingredients to a high powered blender and process
I’m lucky to live in Florida where Mango’s just fall from the sky, literally. There are Mango tree’s everywhere making it a convenient and thrifty ingredient to freeze and add into to smoothies, or to make ice cream like I did here. And yes they are really good for you too. Mango’s help to prevent a variety of cancers, regulate hormones, and lower cholesterol. They also happen to be very high in iron making them great for anyone with iron deficiency anemia. Mango’s can even clear up acne both by consuming them internally and placing the peels on your face externally.

Banana's are what really give this dish the ice cream like texture. I always keep frozen banana's in the freezer for smoothies and for days like these where I am craving ice cream. They contain your essential B vitamins, especially B-6. Banana's are a great source of potassium as well. They can help lower blood pressure. And in both Chinese medicine and Western, Banana's can help heal stomach ulcers too.
