This recipe was an excuse to indulge at the olive bar in Whole Foods. I couldn't resist the fresh mozzarella medallions and roasted red peppers, and wanted to come up with a healthier way to eat them. So I threw in some fresh basil from my garden and mixed it all together with some good nutritious Quinoa. In no time you have an easy, healthy, and satisfying meal.
Serves: 4-6
  • 1 ½ cups of Quinoa
  • 3 Cups of water
  • 1 tbsp of Garlic Powder
  • ½ cup of Roasted Red Peppers in oil chopped
  • 1 cup of fresh mozzarella chopped, or buy small medallions
  • ⅓ cup of Fresh Basil chopped
  • Juice from ½ Lemon
  • 1 tsp of Sea Salt or to taste
  1. Add Quinoa to 3 cups of water and bring to a boil
  2. Reduce to a simmer, add Garlic powder and cook until water is absorbed
  3. Let Quinoa cool for a bit and then mix in Red Peppers, Mozzarella, and Basil
  4. Add Lemon Juice and Salt to taste
Quinoa is considered one of the healthiest grains. Not only is it Gluten free, but it's a complete protein containing 9 essential amino acids. It also contains twice as much fiber as other grains. Packed full of Phytonutrients and Antioxidants it is no wonder that Quinoa was so highly valued by ancient tribes that would consume this grain for health and stamina.

And while the Mozzarella may be lacking in the nutrition department, the roasted red peppers more then makes up for it. Red Peppers are an excellent source of Vitamin C and Vitamin A. They also contain an impressive amount of Flavonoids and Carotenoids which are your basic Phytonutrient Antioxidants. Because of this Red Peppers are also known as an anti-inflammatory and anticancer food.

Basil is an herb used for a wide variety of medical conditions due to its antibacterial properties. It can help treat the common cold as well as Heart disease. It also boost your immune system and is considered a cancer fighter as well. In Chinese medicine Basil helps to stimulate the digestive system and treats indigestion.
