Parmesan Garlic Roasted Edamame
The best way to prevent an overeating binge fest is to 1) make sure your kitchen is stocked with only healthy food and 2) make sure you always have a healthy snack on hand. I take food with me every where I go. I've learned from the past that when I'm out and get hungry (or hangry as my friends and family would say) I need to eat, like now! My blood sugar drops, I get a little shaky, and I am no fun to be around. So having some sort of snack with me is essential to not only my well being, but the well being of those in my company. This is my newest favorite snack. Edamame is packed full of protein which will keep you full longer so that you don't run home and eat half a jar of almond butter because you are so hungry (not that I've done that or anything). Plus this is so tasty, even kids would love it!
Recipe type: Snack
  • 1 package of frozen Edamame
  • ¼ cup of grated parmesan cheese
  • ½ tsp of garlic powder
  • Sea Salt to taste
  • Olive Oil
  1. Let Edamame defrost and pat dry with a paper towel
  2. Combine Edamame with parmesan cheese, garlic powder, salt, and lightly coat with olive oil.
  3. Lay out on a cookie sheet and bake at 400 for 15 minutes until crispy.
In just a ½ cup serving of Edamame you get 9g of FIber and 11g of Protein! That in itself makes it a nutritional powerhouse. On top of that it helps to reduce insulin resistance, lower cholesterol, and supports cardiovascular health.
