Pesto Spaghetti Squash
I've been obsessed with squash this fall. All different varieties. Although Spaghetti squash has always been one of my favorites simply because it makes such a great pasta substitute. One of my quick meal tricks has been to pick up some vegan pesto and cherry tomatoes and add them to spaghetti squash for an easy meal. Perfect to eat when you are craving carbs!
Recipe type: Main
  • 1 Cooked Spaghetti Squash
  • Vegan Pesto (Whole Foods, or make your own)
  • Cherry Tomatoes
  1. Cook Spaghetti Squash whole or cut in half on baking dish for about 60 minutes at 400
  2. Scoop out seeds and use a fork to scrape out squash
  3. Add desired amount of pesto and tomatoes
