I don't know about you but my favorite part of Thanksgiving is the Pumpkin Pie. In fact my favorite thing about the fall season is that everything is Pumpkin flavored! Pumpkin Spice Latte, Pumpkin Beer, Pumpkin Granola, Pumpkin Creamer, Pumpkin Ravioli, etc.... I'll eat/drink it all! You could say I'm a Pumpkin flavor junkie. So I thought why not come up with my own Pumpkin treat that's healthy, easy, and bursting with the taste of fall!

Ingredients
  • ½ cup of canned Pumpkin Pie (or fresh puree)
  • 1 cup of Almond/Rice/Hemp/ Soy Milk
  • ½ frozen Banana
  • ½ tsp of Pumpkin Pie Spice Mix
  • 1 tsp of Agave or Honey
Instructions
  1. Add all ingredients into a blender and process on high
  2. Add more pumpkin and less milk if you want a thicker smoothie

Pumpkin is so good for you it should really be the type of food we eat year round!

Pumpkins are high in the antioxidant Beta-carotene, which amongst other things is a powerful cancer fighter. I could go on and on about the health benefits of pumpkins. They are also high in potassium, and serve up a good dose of magnesium. They are considered to be an anti-inflammatory, and even help to neutralize free radicals in the body giving it an anti-aging component as well.
