Coming up with a Vegan meal that is grain free and also filling is no easy task, but I think I succeeded here. I recently have taken a break from meat, and was looking for a quick veggie filled meal that would satisfy me and keep me full. Considering that I don't really do grains, or dairy, my choices are limited. But this combination satisfies all my dietary requirements, plus it tastes so good! My tip for preparing your own veggie bowl in under 10 minutes with practically no prep is to buy bags of frozen organic veggies. Contrary to popular belief organic veggies that are flash frozen actually retain more vitamins and nutrients than the produce that has been sitting in the grocery store. This makes "cooking" a breeze.

Ingredients
  • Organic Broccoli (Frozen or Fresh)
  • Organic Butternut Squash (Frozen or Fresh)
  • Organic Kale (Frozen or Fresh) I prefer fresh for the kale so that it doesn't get too cooked down
  • 1 tbsp of Tahini
  • 2 tbsp of fermented Sauerkraut
  • A few slices of Avocado
  • Himalayan Salt to taste
Instructions
  1. Steam desired amount of broccoli and butternut squash for 5-10 minutes
  2. During last few minutes of steaming add in the kale
  3. Drain steamed veggies
  4. Add tahini and himalayan salt and mix
  5. Top with Sauerkraut and avocado.
