Strawberry Hemp Salad
 
Even though I upload new recipes every week, admittedly I tend to eat the same thing several days in a row. Salads are my staple lunch. And I noticed that I tend to go on salad themes depending on the season. In the fall I will make more of a savory salad, in the winter something more rich and hearty. But in the summer I like to keep it light and fresh. This has been my salad of choice for the past month. I've listed all the ingredients without amounts because I never measure what I put into a salad. And let's face it, it's not that complicated to throw a salad together.
This salad has so much flavor with it that it's best to keep the dressing simple. I use a little hemp oil sprinkled with some apple cider vinegar for my dressing. A little olive oil and lemon juice would go nice as well. Feel free to experiment here and play around with the ingredients. I eat this as a meal, but it could also work well as a side dish. And don't let the light ingredients fool you, this salad can be quite filling. This meal leaves me stuffed!

Ingredients
  • Salad Greens of choice
  • Strawberries sliced
  • Cucumber sliced
  • Avocado sliced
  • Chick Peas
  • Hemp Seeds
  • Cashews
  • Goji Berries
  • Dressing of Choice (I sprinkle hemp seed oil and apple cider vinegar)
Instructions
  1. Add the desired amounts of each ingredient and mix with dressing of choice.
Notes
Strawberries contain more Vitamin C then any other fruit, including oranges! They have so many phytonutrients and antioxidants that they have been strongly linked to cancer prevention and cardiovascular health. They are also one of the only fruits that help regulate blood sugar.

In Chinese medicine it is used to treat excess heat in the body and is especially useful in cooling you off during the summer months.


Goji berries are by far my favorite superfood and I add them into everything. These little guys are full of Antioxidants, Vitamins, and Minerals. In Chinese medicine there are actually considered to be an herb called Gou Qi Zi and are used to nourish blood, improve eye sight, and increase longevity. From a Western medical perspective they improve heart health and help to prevent cancer. With 21 trace minerals Goji berries are a completely protein source that you want to make a regular part of your diet.


Hemp seeds are a great ingredient to throw in a salad. They are a high protein seed that contains 9 essential amino acids. They are a great source of fatty acids and have a balanced ratio of Omega 3 and 6. Hempseeds are also an herb in Chinese medicine called Huo Ma Ren which helps to nourish fluids in the body and promote healthy digestion. This tiny little seed packs quite nutritional punch!


In my world Avocado's would be included in every salad. They are known for containing all of your good healthy fats that help lower cholesterol. They also contain high levels of Folate and Lutein, which helps to support eye health. Avocados lower blood pressure, and reduce the risk of stroke. They also bring more oxygen and blood flow to the brain, improving cognitive function. And in addition to all their healthy fats they contain a high amount of fiber and promote healthy digestion. They are known for a wide variety and anti-inflammatory benefits due to its high nutrient content. This also makes it a great cancer fighter, and overall one of the best foods you can eat!
