Sweet Potato Snack
 
I would call these Sweet Potato chips but honestly they don't taste like chips to me. They may have the crispness of chips but they are more dense, with a lot more flavor, and a whole lot more nutrition. I eat this as a snack pretty much every day. It's my favorite solution to that afternoon energy slump. And the best part is that they satisfy all your cravings, a little sweet, a little salty, and just the right amount of crispness. Enjoy!

Ingredients
  • 2-3 Sweet Potatoes
  • Sea Salt
  • Cinnamon
  • Olive Oil or Coconut Oil
Instructions
  1. Slice Sweet Potatoes (with skin) into small, even, thin slices
  2. Lay slices out on a cookie sheet
  3. Coat with desired amount of Salt, Cinnamon, and Oil (don't use too much oil or they will get soggy, just enough to coat)
  4. Bake at 400 for about 20-30 min (cook until crisp, not burnt, keep an eye on them)
Notes
What's nice about this snack is that the carbohydrates in the Sweet Potatoes give you a nice little energy boost, and at the same time the oil helps to slow down the spike in carbohydrates and satiates your hunger. Cinnamon is also used to help regulate blood sugar and helps to eliminate that energy crash that you get in the afternoons. Sweet Potatoes are packed full of Vitamin A which is great for boosting your vision, strengthening your immune system, and keeping your skin healthy. You also get a good amount of fiber with this snack which is important for your digestion system and helps fill you up. In Chinese Medicine Sweet Potatoes help boost your Qi, can't say the same for a bag of chips.
